This week's dinner includes a generous portion of veggie lasagna with house made tofu ricotta and vegan mozzarella, a heaping classic Caesar salad with cashew parmesan, house made garlic bread, and 12oz. of creamy butternut squash soup.
We have transformed our counter-service cafe into a gourmet pick-up/delivery kitchen, and we are excited to launch an ever-changing menu of fresh and frozen items... all vegan, organic & seasonal, created by our own Chef Katlyn - celebrated for her passion and creativity.
Animal Protection Voters of New Mexico is a (501(c)(4) charitable organization that works to pass local, state and federal laws that protect animals and reduce animal suffering. Two of the Root 66 co-founders, JC Corcoran and Dave Holland, are on the board of APVNM and oversee its statewide activities.
